Fusing the finest Champagne  from Aÿ, France, with premium caviar from Australia’s Yarra Valley, the weekend promises to offer a culinary experience like no other. A collaboration with renowned ceramicists, The McCorry Collection, to craft bespoke centrepieces for guests to take home will add an extra layer of sophistication to your dining experience.

Champagne and Caviar Masterclass

Dive into a world of decadence as we unravel the secrets of pairing Champagne from Aÿ, France with the finest caviar from Yarra Valley Caviar.

Champagne Dinner

Enjoy a Champagne dinner featuring Lallier's premium expressions, paired with artisanal ingredients that tell the unique story of Lizard Island’s pristine location through the plate.

Casual Canapés & Champagne

ABOUT CHAMPAGNE LALLIER

Nestled in the heart of the Aÿ region and owned by the Lallier family for over a century, Lallier celebrates 115-years of tradition, offering fresh perspectives and expressive winegrowing to Champagne making. We believe that the richness of the terroir is best yield and shared by those who recognise its infinite potential, letting it express it’s individual character. Today, Cellar Master Dominique Demarville continues to craft world-class cuvée Champagne with “Haute Couture” vinification technique’s, guided by his intuition of what he believes a wine should express.

Champagne Lallier calls home to two complementary locations in iconic Grand Crus region: the first in Aÿ, which houses our aging cellar, and the second in Oger, Côte des Blancs, where the Maison’s contemporary production facilities are held. Each location compliments the other, marrying aged old techniques with creative innovation.

 

ABOUT YARRA VALLEY CAVIAR

Yarra Valley Caviar is a boutique fresh water aquaculture farm located at the base of the Rubicon River in the Yarra Valley region of rural Victoria. Not only is Yarra Valley Caviar Australia’s only producer of fresh water Atlantic Salmon, it pioneers a natural approach to rearing and roe extraction, demonstrating a staunch belief in humane practices. In addition to Salmon, Yarra Valley Caviar also produces and harvests Rainbow Trout and Brook Trout roe for their caviar range.

The fish are milked for roe entirely by hand, once per year, under a completely natural anaesthetic of clove oil, and are then gently placed back in their ponds to spawn again the following year. Yarra Valleys Caviar’s products are packaged on site, without the use of any additives. The result is a superb quality roe salted with premium salt to produce bright, plump and flawless caviar – bursting with flavour. The award winning products are then shipped all over the world, including to Lizard Island.

 

ABOUT THE McCORRY COLLECTION

The McCorry Collection is a family-owned art gallery based in Australia. The company was founded in 2015 by four family members, who started by selling decorative items. They have since expanded their inventory to include art, stamps, and pottery. The McCorry Collection is proud to promote Australian art and artists.

Our visit was part of a special Penfolds 75 anniversary! We weren't sure what to expect but certainly were not disappointed. All meals were designed to match white and red wines and included a masterclass conducted by Penfolds winemaker Andrew Hales. In between all the wining and dining we had time to take a tinnie out for a picnic and snorkelling. - Truus

Food and wine were very impressive - far and away the best dining we've ever done at an all inclusive resort, and the food heavily features local in-season ingredients. Menus change daily and are creative and varied - we looked forward to every meal. - Nathan
